On the second (business) day of Christmas, the Law Society staff gives to you:
French Toast with Berry Compote
2/3 cup milk
1/3 cup flour
½ tsp vanilla
¼ tsp cinnamon
your choice of bread
Bring the berries, sugar and 1/3 cup water to a gentle boil over 10 minutes.
Thicken the compote by mixing the corn starch and ¼ cup water and adding to berries.
Cook for an additional minute and remove from heat.
For the French Toast
Mix together dry ingredients.
Beat eggs, milk, vanilla and add to dry ingredients.
Heat large skillet or griddle, add butter.
Dip each slice of bread into mixture and transfer to skillet.
Cook, flipping once, until browned on both sides.
Continue adding butter as you cook more French toast.
Spoon the compote onto the French toast, add maple syrup and sprinkle with powdered sugar.
